1 Lime
2 Tablespoons Rice Vinegar
1 Tablespoon Soy Sauce
2 Tablespoons Oil
1 teaspoon dried red chili flakes
1 Tablespoon minced ginger
1 Tablespoon Brown Sugar
2 Cups Shredded Chicken
1 2-ounce package of rice noodles (or approx 2 cups)
4 Tablespoons Basil Leaves
1 Cup Cabbage, shredded
1 Carrot, shredded
4 Tablespoons chopped peanuts
2 Tablespoons Fresh Cilantro
1. In medium saucepan heat 2 cups water to simmering. Add rice noodles, cover and turn off heat. Allow to soak for 5 minutes, until soft. Drain.
2. In small bowl, whisk together juice of lime, rice vinegar, soy sauce, oil, chili flakes, ginger and brown sugar.
3. In large bowl, gently toss together rice noodles, chicken, basil leaves, cabbage and carrots. Pour dressing over top.
3. Top with 4 Tablespoons chopped peanuts and chopped cilantro.
