Ingredients

4 boneless, skinless chicken breast halves
2 cloves garlic, minced
½ cup chopped onion
2 TB olive oil
1 large can (28-oz) diced tomatoes
2 cups water
½ tsp thyme
½ tsp oregano
1 tsp salt
¼ tsp pepper
1 bay leaf
2 - 6oz boxes Uncle Bens Long Grain & Wild Rice (original recipe) with flavor packets
1 can artichoke hearts, packed in water, drained and cut into small pieces

Cooking Instructions

Cut chicken into bite-size pieces and set aside.

In a large pot, sauté garlic and onion in olive oil until soft. Stir in tomatoes with their liquid, water, thyme, oregano, salt, pepper, bay leaf, and flavor packets from the rice; bring to a boil. Add chicken and rice, cover pot and reduce heat to low. Cook for 25 min or until rice is tender, most liquid is absorbed, and chicken is cooked through. Stir in artichokes and serve.
