This is a simple, easy to make chicken dinner that both children and adults love. While it has some spice it is not too hot for anyone.
Southwestern Chicken Tenders
3/4 cup all-purpose flour
1 package taco seasoning mix
1 teaspoon salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
2 pounds chicken tenders
3/4 cup unsalted butter, melted and kept warm
2 cups finely crushed corn chips
Preheat oven to 375̊ F. Line a large, rimmed baking sheet with parchment paper and coat paper with nonstick cooking spray.
In a large, shallow bowl combine flour, taco seasoning, salt and pepper. Whisk to blend.
Dip a chicken tender in flour mixture, dip the flour coated tender in the melted butter and then roll in the crushed corn chips. Place on prepared baking sheet. Repeat with remaining tenders.
Bake until the chicken is no longer pink and the coating is golden brown, about 20 - 30 minutes.
Serve immediately.
