This recipe was given to me by a co worker of my sister. It is easy enough for every day, elegant enough for company.
4 chicken breasts, skinless and boned
2/3 cup butter
1/2 cup Italian bread crumbs
2 tablespoons parmesean cheese
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoons salt
1/2 teaspoon garlic salt
Sauce ingredients:
1/4 cup white wine, your choice, I like chardonnay
1/4 cup chopped scallions, green parts too
1/4 cup fresh parsley, chopped
Preheat oven to 375 degrees.
Melt butter, combine bread crumbs, cheese, basil, oregano, salt, garlic salt.
Dipe chicken in melted butter, then roll in crumb mixture.
Reserve remaining butter
Place chicken in ungreased pan.
Bake for 50 to 60 minutes or until juices are clean.
Meanwhile add wine, green onions, and parsley to remaining butter ( should have about 1/2 cup).
When chicken iis golden brown, pour sauce over, and bake for 5 minutes or until sauce is completely heated through.
