Ingredients

These small chicken bites are the perfect addition to any small entertaining menu. Weather just having a few friend over, or dining in style with the family, this recipe is sure to please.

4 boneless chicken thighs
2 quarts chicken stock (low sodium)
2 jalepenos
1/2 small onion
1/2 bell pepper
1 c. Barbeque sauce
12 minature slider buns (perfer whole wheat)

Cooking Instructions

1) In a stock pot, bring the chicken broth to a simmer and add the chicken thighs. Boil the thighs for about 20 minutes until the meat almost falls apart.

2) Chop and seed the jalepenos. Chop the onion and bell pepper into 1/4 in. dice, and mix together in a bowl with barbeque sauce.

3) Shred the chicken and add to the barbeque sauce. Place the mixture into a 3 quart pot and bring to a simmer.

4) Toast the slider buns, and top with about 3 oz. of the shredded chicken on each bun.

Enjoy the sweet and savory concoction with that little tinge of spice in the background.
