Host a party and spice up the appetizers with a boneless buffalo chicken dish dressed in a special buffalo sauce. Finger food can’t get much easier then a three step breading process before throwing it in the oven. Enjoy a flavorful and healthier version of the ‘bar & grill’ wings…
Ingredients:
* 1 cup – flour
* 1/2 tsp – cayenne pepper
* pinch of pepper
* 1/4 tsp – chili powder
* 1 tbs – buttermilk (optional)
* 3 – eggs
* 2 cups – ‘franks’ hot sauce
* 2 cups – italian panko breadcrumbs
* 1/3 cup – unsalted butter
* 1/8 cup – sour cream
* 1 lb – boneless skinless chicken breasts ( cut into 3 strips per breast)
* 1 tbs – honey (optional)
* 2 – grated garlic cloves
* 1 tsp – lemon juice
* ‘PAM” cooking spray
Directions.
1. Preheat oven to 400 degrees. Mix flour, cayenne, pepper and chili powder in one dish. Mix buttermilk, eggs and 1/2 tbs of hot sauce next. Lastly, pour in panko breadcrumbs in a third dish and bread the chicken.
2. Spray baking sheet with cooking spray. Place chicken on tray and coat top with spray. Let cook in oven for about 35-40 minutes until crispy flipping once.
3. While chicken cooks, make homemade buffalo sauce. Mix rest of hot sauce, butter, sour cream, honey, garlic and lemon juice. Simmer until chicken is ready. Dredge chicken in buffalo sauce and serves with celery and dip if desired.
