This fun dish will have your children doing two things that might otherwise be impossible – eating their vegetables and learning a science lesson at the same time. For a more hearty meal, make some of their favorite pasta and serve it with the extra sauce.
--4 boneless, skinless chicken breasts
--2 cups Italian bread crumbs
--2 eggs
--2 tablespoons melted butter
--1.5 cups olive oil
--1 28 ounce can tomato sauce
--1 28 ounce can peeled tomatoes (either Italian or plain)
--1 unpeeled eggplant
--1 unpeeled yellow squash
--1 unpeeled zucchini
--1 cup baby carrots
--1 cup cauliflower
--2 cups shredded provolone cheese (or if you can’t find shredded provolone, cut 12 slices of provolone cheese into thin strips)
--2 cups ricotta cheese
--A few drops of blue food coloring
--Heat the olive oil in a large skillet on medium heat.
--Beat the eggs into the melted butter. Dredge the chicken in it, then coat it with the bread crumbs.
--Fry the chicken in the heated olive oil for about 10-15 minutes or until done.
--Meantime, cut the yellow squash, eggplant and zucchini into half-inch slices.
--Cook all the vegetables EXCEPT THE CAULIFLOWER in the microwave in a large bowl covered with plastic wrap for about five minutes (the vegetables should be tender but not mushy) and keep warm when done.
--Cook the cauliflower to the same tenderness separately.
--Combine the ricotta cheese and provolone in a separate bowl.
--Put the finished, fried chicken in a greased baking dish.
--Preheat oven to 400 degrees F.
--Either clean the skillet you fried the chicken in or get a new skillet large enough for the two cans of tomatoes. Heat the tomato sauces to a low boil in this skillet.
--Add the sauce to the bowl you cooked the vegetables EXCEPT THE CAULIFLOWER in.
--Spoon or the pour the sauce over the chicken and then top the chicken with the provolone and ricotta cheese mixture.
--Cover with the chicken dish with foil and cook at 400 degrees F for about 20 minutes.
--Meantime, spoon some cauliflower onto a serving plate and add the few drops of blue food coloring.
--When the chicken is done, add it to same serving plate and bring it to the table.
