I always pair my chicken parmesean with spaghetti and my home made marinara sauce. Probably every one out there has a recipe for chicken parm, but you need to try this one because it is simple, delicious, and really is one of my go to recipes for years.
Ingredients:
4 skinless, boneless chicken breasts
1/2 cup white wine
1/2 cup prepared Italian dressing in a bottle, your favorite
3/4 cup all purpose flour
2 eggs
2 tablespoons water
1/4 cup olive oil
BREADING:
1 cup Italian bread crumbs
2 tablespoons parmesean cheese
1 teaspoon dried sweet basil
1 teaspoon oregano
4 thick slices mozarella
64 ounces marinara sauce purchased or home made
1 pound box spaghetti, or pasta of your choice
Put chicken breasts in a large zip lock bag, pour in the Italian dressing and white wine. Marinate a few hours, or even ovenight.
In a bowl combine the bread crumbs, parmesean cheese, basil and oregano.
In another bowl combine the egg and water.
Put the flour in a separate bowl
Roll chicken in flour, then dip in egg wash, then bread crumbs
Heat olive oil in fry pan and fry chicken til browned.
Put in a pre heated 350 degree oven until juices run clear.
The last 10 minutes of cooking put one slice of mozarella on each piece of chicken and allow to melt.
Meanwhile cook pasta to package directions and heat marinara sauce.
Serve chicken with melted mozarella over pasta and marinara sauce.
